Egg-Free Frosted Banana Muffins
We couldn’t let today go by without sharing just one more #tasty banana treat! These EGG-FREE frosted banana bread muffins are a must-try.
It is National Banana Bread Day after all! (February 23rd)
If you have loved ones with egg allergies, we’ve got you covered. Try these EGG-FREE frosted banana muffins and you won’t have to wait long for your family’s standing ovation.
Ingredients:
1.5 cups flour
1 cup sugar
1 tsp baking soda
3-4 ripe bananas
1 Tbsp ground flax seed
3 Tbsp water
1/3 cup oil
1 tsp salt
1 tsp vanilla
1/2 cup sour cream
Instructions:
Preheat oven to 375 degrees. Combine ground flaxseed and water in a small bowl. Stir and set aside for 3 minutes. Use mixer to combine all ingredients including flaxseed mixture. Place in greased muffin tins (we use muffin liners) and bake for 20 minutes.
Frosting Ingredients:
2 Tbsp butter, room temperature (not melted)
1/4 cup brown sugar
1 Tbsp cream or milk
1/2 cup powdered sugar
Frosting Instructions:
Combine all ingredients together in bowl. Top each egg-free banana muffin with a small amount of frosting. Enjoy!
